Quinoa soup

After a long break, I am joining you all with an healthy starter. I have never posted anything related to quinoa. This is an easy and healthy soup. The person who hates quinoa, will also try this soup..... When served with pasta it is a wholesome dinner.

Ingredients:

  • Quinoa - 1/4 cup
  • Bell pepper - 1/4 cup (Red, green and yellow), finely chopped
  • Carrot - 2 tbsp, finely chopped
  • Cabbage - 2 tbsp, finely chopped
  • Olive oil - 2 tsp
  • Lemon juice - 1 tsp
  • Corn flour - 2 tsp
  • Pepper and salt - to taste
Method:


Heat a saucepan with oil, add the vegetables and cook for 2 minutes. Season with pepper and salt. Add 2 cups of water and let it boil.
When boiling, add quinoa and cover with a lid. when quinoa is cooked, mix cornflour with a tbsp of water and transfer to the boiling mixture. After a boil switch it off. Add lemon juice.

Serve the soup with any pasta or warm bread.

Note:
  • For extra flavor you can add Italian seasoning.

Such a wonderful blend of flavours, colors and textures! I have never tried a quinoa soup... this sounds really hearty and delicious :)

Ramya I am not sure about the variety, I always buy organic natures earthly choice and never tried the other brand.
